
Cellaring:
This Riesling can be enjoyed now, while fresh and young. This wine is well worth cellaring, as it will continue to develop in the bottle for 510 years.
The Vines:
The vines A 2.6 ha block of the Jacksons Road property of Riverby Estate was planted with Riesling (clone Gm239) in 1994. The rows are aligned North-South and the vines are trained to the Mid-Height Sylvoz trellis system. An open grapevine canopy is created by the trellis system and vine trimming to allow ample sunlight and wind penetration.

Vinification:
To ensure fresh fruit flavours are retained, antioxidative handling was used at all times during vinification. This included grapes being machine harvested in the cool of the night and de-stemmed and crushed with minimal skin contact. The lightly pressed juice was inoculated with a neutral yeast strain in a stainless steel tank. The fermentation temperature was maintained between 1113ºC.
